Summer Crab Ceviche

Crab-Ceviche

Ingredients

  • 1 pound Crab meat: super lump or lump is preferred
  • 1 cup Coconut Milk
  • 1 Avocado
  • 4 Scallions, finely sliced
  • 1 Poblano Chili, small dice
  • 1 Red Bell Pepper, small dice
  • 2 Mangos, peeled and small dice
  • 1 Jalapenos, seeded and diced
  • 1 teaspoon Salt
  • 1 tablespoon Sugar
  • 1 tablespoon Ginger, grated
  • 1 Lemon, juiced
  • 1 Lime, juiced
  • 1/4 cup Orange Juice
  • 2 tablespoons Olive Oil
  • 1 tablespoon Cilantro, finely chopped

Instructions

  1. Add the vegetables and fold together using a rubber spatula.
  2. Add the crab and gently fold together, being careful not to break up the crab.
  3. Allow to marinate under refrigeration for 30 minutes.
  4. Garnish with additional cilantro and serve with tortilla or plantain chips.
