Ingredients
- 1 pound Crab meat: super lump or lump is preferred
- 1 cup Coconut Milk
- 1 Avocado
- 4 Scallions, finely sliced
- 1 Poblano Chili, small dice
- 1 Red Bell Pepper, small dice
- 2 Mangos, peeled and small dice
- 1 Jalapenos, seeded and diced
- 1 teaspoon Salt
- 1 tablespoon Sugar
- 1 tablespoon Ginger, grated
- 1 Lemon, juiced
- 1 Lime, juiced
- 1/4 cup Orange Juice
- 2 tablespoons Olive Oil
- 1 tablespoon Cilantro, finely chopped
Instructions
- Add the vegetables and fold together using a rubber spatula.
- Add the crab and gently fold together, being careful not to break up the crab.
- Allow to marinate under refrigeration for 30 minutes.
- Garnish with additional cilantro and serve with tortilla or plantain chips.
