Claw Curry Patties

Curry with Premium Pasteurized Claw Meat patties

Ingredients

  • 1 pound Claw Meat
  • 1 teaspoon Pepper
  • 1 pinch Curry Powder
  • 1 pinch Ginger
  • 1 Clove of Garlic
  • 1 teaspoon Sugar
  • 2 Diced Carrots
  • 2 Diced potatoes
  • 1 Chopped Red Bell Pepper
  • 4 teaspoons Cooking Oil
  • 2 Eggs
  • 1/2 cup Flour
  • 2 cups Coconut Milk
  • 1 teaspoon Salt

Instructions

  1. In a bowl add 1 can of claw crabmeat, two eggs, 1/2 cup of flour, a dash of salt and pepper, and fold the ingredients together. Set aside.
  2. Use the mixture to create 3-4 oz patties and set aside.
  3. Dice your carrots, bell pepper and potatoes.
  4. Heat two teaspoons of oil and saute your carrots and potatoes for 5 minutes and set aside.
  5. In a separate pan, add 1 teaspoon of oil, saute the garlic and add 2 cups of coconut milk and let it simmer.
  6. Once your mixture comes to a simmer add your vegetables, ginger, curry, salt, pepper and sugar. Let your mixture simmer for an additional 8 minutes or until your carrots and potatoes are fork tender.
  7. In a separate pan, add 1 teaspoon of oil, and heat your claw patty for 3-5 minutes.
  8. Add your claw patties to your coconut milk mixture.
  9. Optional, garnish with cilantro and serve.
