Ingredients
- 1 pound Claw Meat
- 1 teaspoon Pepper
- 1 pinch Curry Powder
- 1 pinch Ginger
- 1 Clove of Garlic
- 1 teaspoon Sugar
- 2 Diced Carrots
- 2 Diced potatoes
- 1 Chopped Red Bell Pepper
- 4 teaspoons Cooking Oil
- 2 Eggs
- 1/2 cup Flour
- 2 cups Coconut Milk
- 1 teaspoon Salt
Instructions
- In a bowl add 1 can of claw crabmeat, two eggs, 1/2 cup of flour, a dash of salt and pepper, and fold the ingredients together. Set aside.
- Use the mixture to create 3-4 oz patties and set aside.
- Dice your carrots, bell pepper and potatoes.
- Heat two teaspoons of oil and saute your carrots and potatoes for 5 minutes and set aside.
- In a separate pan, add 1 teaspoon of oil, saute the garlic and add 2 cups of coconut milk and let it simmer.
- Once your mixture comes to a simmer add your vegetables, ginger, curry, salt, pepper and sugar. Let your mixture simmer for an additional 8 minutes or until your carrots and potatoes are fork tender.
- In a separate pan, add 1 teaspoon of oil, and heat your claw patty for 3-5 minutes.
- Add your claw patties to your coconut milk mixture.
- Optional, garnish with cilantro and serve.
