Crustless Crab Bites

Ingredients

  • 2 Large Eggs
  • 1/4 teaspoon Pepper
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Sirracha Sauce
  • 1/2 teaspoon Worcestershire sauce
  • 2 tablespoons Flour
  • 1 cup Shredded Swiss Cheese
  • 1/2 cup Whole Milk
  • 1/2 cup Mayonnaise
  • 8 ounces Lump crab meat
  • 4 Scallions, diced

Instructions

  1. Preheat oven to 350 degrees
  2. Spray muffin tin with non stick spray or grease with butter
  3. In a large bowl whisk the eggs, milk, mayonnaise, flour, spices, and siracha. Add in any vegetables of your choice (spinach, onion, peppers)
  4. Stir in your cheese and gently fold in your crab meat.
  5. Pour your mixture into your muffin tin and top with scallions.
  6. Bake for 25 minutes until the bites are puffed and edges are browned.
  7. Let cool for 3-5 minutes or until egg bites settle and enjoy.
