Ingredients
- 1 pound Lump Crabmeat (canned or frozen)
- 3 cups Cooked & cooled rice (day old preferred)
- 3 tablespoons Vegetable or Avocado Oil
- 2 Eggs, beaten
- 2 Cloves garlic, minced
- 1 Shallot, diced
- 3 Green onions, thinly sliced
- 2 tablespoons Soy Sauce
- 1 tablespoon Oyster Sauce
- 1/2 teaspoon Sugar
- 1/4 teaspoon White Pepper
- 1/2 teaspoon Black Pepper
- 1/2 teaspoon Salt
- 1 Lime (garnish)
Instructions
- Heat oil in a skillet or wok. Add chopped scallions and garlic. Sauté until fragrant.
- Stir in any vegetables of your choice.
- Pour in the beaten eggs and scramble.
- Add in rice, soy sauce, oyster sauce, and seasonings. Stir to evenly coat the rice.
- Gently fold in the crab meat and stir for 1 minute. Let the rice sit for 1 minute, stir, and let sit for an additional minute or until crispy.
- Serve and garnish with green onions, lime, and optional sweet chili sauce.
