Crab Fried Rice

Ingredients

  • 1 pound Lump Crabmeat (canned or frozen)
  • 3 cups Cooked & cooled rice (day old preferred)
  • 3 tablespoons Vegetable or Avocado Oil
  • 2 Eggs, beaten
  • 2 Cloves garlic, minced
  • 1 Shallot, diced
  • 3 Green onions, thinly sliced
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Oyster Sauce
  • 1/2 teaspoon Sugar
  • 1/4 teaspoon White Pepper
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Salt
  • 1 Lime (garnish)

Instructions

  1. Heat oil in a skillet or wok. Add chopped scallions and garlic. Sauté until fragrant.
  2. Stir in any vegetables of your choice.
  3. Pour in the beaten eggs and scramble.
  4. Add in rice, soy sauce, oyster sauce, and seasonings. Stir to evenly coat the rice.
  5. Gently fold in the crab meat and stir for 1 minute. Let the rice sit for 1 minute, stir, and let sit for an additional minute or until crispy.
  6. Serve and garnish with green onions, lime, and optional sweet chili sauce.
