Yucatan Crab & Mango Ceviche

Ingredients

  • 1 cup Coconut Milk
  • 1 tablespoon Cilantro, finely chopped
  • 1 pound Crab
  • 4 Scallions, finely sliced
  • 1 Poblano Chili, small dice
  • 1 Red Bell Pepper, small dice
  • 2 Mangos, peeled and small dice
  • 1 Jalapenos, seeded and diced
  • 1 teaspoon Salt
  • 1 tablespoon Sugar
  • 1 tablespoon Ginger, grated
  • 1 Lemon, juiced
  • 1 Lime, juiced
  • 1/4 cup Orange Juice
  • 2 tablespoons Olive Oil
  • 1 bag Plantain Chips for serving

Instructions

  1. In a large mixing bowl, combine the first 8 ingredients and whisk until combined. Add the next five ingredients and fold together using a rubber spatula. Add the crab and gently fold together, being careful not to break up the crab. Allow to marinate under refrigeration for 30 minutes. Add the cilantro and gently fold to combine. Portion into serving containers and garnish with plantain chips.
