Watermelon & Crab Gazpacho

Well, Summer is officially here and it is getting hot in the kitchen! Here is a recipe that is not only seasonal and delicious, but is also pretty simple to make and doesn’t require any cooking. You can easily adjust the recipe, change the melon, change the herbs, add some spice, make it you own, the only thing you have to use is our crab.

  • 2 cups Watermelon, cubed
  • Chalula Hot Sauce to taste
  • For the Relish
  • 1/2 cup Cucumber, small dice
  • 1/2 cup Fresh tomato, small dice
  • 1/2 pound Crab
  • 1/2 cup Watermelon, small dice
  • 1 tablespoon Lime juice
  • 1 Jalapeno, minced
  • Salt & Pepper to taste
  • Salt & Pepper to taste
  • 1 cup Spicy V8
  • 1/4 cup EVOO
  • 1 14oz Can Fire Roasted Tomatoes
  • 1 12oz Jar Roasted Red Peppers, drained & chopped
  • 1 Jalapeno, diced
  • 2 tablespoons Cilantro, minced
  • 1 tablespoon Garlic, minced
  • 1/2 tablespoon Ginger, minced
  • 1 Seedless Cucumber, peeled and diced,
  • 1/2 Small Red Onion, diced
  • 1 Lime, juiced and zested
  • 1 tablespoon Cilantro, chopped


  1. For the Soup
  2. Add ingredients for gazpacho except V8 to a food processor. Blend until smooth add V8 to deisred viscosity. Season with S&P and hot sauce. Chill well before serving (the soup not you sitting on the couch watching Netflix)
  3. For the Salsa
  4. Combine all ingredients excpet crab in a bowl ans gently mix. Season with S&P to taste. Add the crab and gently mix to combine
  5. To Serve
  6. Place a scoop of the relish in the center of a bowl and pour the chilled soup tableside.
