Crab and Chorizo Quesadilla

Melty cheese and crab in a toasted tortilla. The crab and chorizo quesadilla has it all and is really quite simple to make.

  • 8 ounces Crab meat
  • 6 Flour (9-10”) Tortillas
  • 1/4 cup Manchego Mornay
  • 1 cup Sharp Cheddar , grated
  • 1/4 cup Chorizo mix
  • 2 tablespoons Scallion, green part, thin sliced
  • 2 tablespoons EVOO
  • 2 Avocado, optional for serving


  1. In a medium bowl add the the Mornay, Cheddar, chorizo and scallion and mix to combine. Add the crab meat and gently fold into the mixture using a rubber spatula. Place an even amount of the mix in to the center of each of the tortillas and fold in half to seal, making sure the filling is completely encased in the tortilla. Heat a skillet over medium heat, add 1 TBS of the oil and allow to heat for about 30 seconds and then add the quesadillas, cooking until golden brown and heated through, turning once, about 5 minutes total. Work in batches, depending on size of the pan.
