Crab and Chorizo Crusted Salmon

How to make an easy yet exciting salmon dish. A really simple and delicious way to cook fish with almost no risk.

  • 8 ounces Crab meat
  • 1/4 cup Chorizo Mix
  • 1/2 cup Manchego Mornay
  • 4 Salmon Filets (6oz each)
  • Salt and Pepper
  • 1 tablespoon EVOO
  • 1/2 cup Romesco sauce for serving


  1. Preheat oven to 425⁰ (or 400⁰ convection, preferred). In a medium bowl add the Mornay, chorizo and crab and mix to combine. Season the salmon filets and spread the crab mixture evenly on top of each and place on a wire rack on a baking sheet. Bake for about 15 minutes , until the topping is golden brown and the fish is cooked through. To serve, place a small pool of the Romesco sauce on each plate and place the salmon on top.
