Meet Our Chef


John Cantwell

John completed his culinary training at the French Culinary Institute in Manhattan where he fostered his passion for creativity in the kitchen. After completing his degree, he quickly became a prominent figure on the Manhattan food scene. He started out as the General Manager at Match Restaurants which featured trend setting Pan-Asian cuisine. Following that he worked for famed restaurateur Michael “Buzzy” O’Keeffe as the Managing Director at the world renowned The River Café, Water Club and Pershing Square. In 2008, John realized it was time to have a project to own and develop, so he opened the restaurant, Taste. Within six months of opening in prestigious Garden City, NY it was named by NY Times as one of the Top 10 New Restaurants.

John joined the Newport team in 2010 where he has developed his passion for all things seafood. He works directly with some of the country’s top restaurant concepts and groups to develop efficiencies in operation for both food cost and labor and increased consistency. Our customers benefit from John’s extensive background as he helps them build opportunities to present new and innovative uses for our products. As a food visionary, Chef John has been instrumental in building and maintaining our high level of culinary competitiveness.
